Ingredients
- 3 tbls. olive oil
- 1 large onion, chopped
- 4 shallots, chopped
- 1/2 lb. baby spinach
- 3 oz. cream cheese, softened
- 1 container sour cream (16oz.)
- salt and pepper to taste
Directions
- Heat oil over medium high heat to hot but not smoking
- Add onion and shallot and saute stirring until lightly browned
- Reduce heat to low and cook until tender
- Add spinach stir until just wilted
- Let cool
- Stir remaining ingredients into onion-spinach mixture
- Chill for about an hour
