How to make it

  • Add prosciutto and garlic to hot oil in frying pan. Cook, stirring, just until prosciutto is crisp, about 2 min. Remove prosciutto and garlic from pan with slotted spoon and set aside.
  • Add mushrooms and onion, saute for a couple of min. Add beans and water to pan. Cover and cook until beans are just tender to bite, about 5 min.
  • Stir in olives. Cook, uncovered, stirring occasionally, until most of the liquid has evaporated, 3 to 4 min.
  • Transfer beans to a serving bowl and sprinkle with prosciutto and garlic. Sprinkle with pepper.

    I've used a green bean and olive recipe before but this sounds even better with the prosciutto added. Will try soon. Thanks!

    Love it. Most veggies are better frozen, but there are some that don't freeze well for whatever reason. With green beans you're better off with canned if you can't get decent fresh ones. O.K. I'm off the pulpit now.
