Hot Chocolate And Grand Marnier Cupcakes

- 6 oz. bittersweet chocolate, chopped shopping list
- 2 tbls. butter, unsalted shopping list
- 1/2 cup sugar shopping list
- 2 large eggs shopping list
- 2 large egg yolks shopping list
- 2 tbls. Grand Marnier shopping list
- 1/4 cup AP flour shopping list
- whipped cream for topping shopping list
How to make it
- Line 12 cup muffin tin with muffin papers
- In a saucepan, melt butter and chocolate until smooth
- Remove from heat
- Beat sugar, eggs, egg yolks, and Grand Marnier with hand mixer until thick ribbon falls when lifted from batter
- Sift flour
- Gently fold flour into batter folding over with rubber spatula
- Fold in chocolate mixture
- Cover and chill at least 1/2 hour (can be left in fridge as long as overnight)
- Preheat oven to 400
- Bake until tops are puffed and cracked, about 7 minutes
- Toothpick inserted into center should come out with batter attached
- Top with whipped cream
