This simple recipe can be used with storebought cookies or you can bake your own. Wrap them individually in plastic wrap for quick convenient snacks. These make a lot more than those 8-10 count boxes of ice cream sandwiches in grocery stores.

Ingredients
  • 1 recipe Loaded Chocolate Chip Cookies(posted here) or cookies of your choice,homemade or storebought
  • 1 half-gallon container vanilla ice cream(or the flavor of your choice)softened
  • Sprinkles,chocolate chips,nuts,crushed candy,etc.

Directions
  1. Bake cookies according to recipe(if using). Cool completely.
  2. Place one cookie flat side up on a flat surface.
  3. Place one rounded scoop of ice cream onto cookie.
  4. Top with another cookie flat side down.
  5. Roll sides in sprinkles,chocolate chips,nuts,crushed candy,or whatever topping you like.
  6. Repeat with remaining cookies.
  7. Freeze sandwiches for at least 1 hour to firm up.
  8. Store in freezer in airtight container or wrap individually in plastic wrap and store in freezer bags.
