Simple stir fry

- 2 c. chicken broth shopping list
- 1 lb Boneless, skinless chicken (cut into chunks) shopping list
- 2 garlic cloves shopping list
- 1/4 c. corn starch shopping list
- 3 T. soy sauce shopping list
- ½ t. ginger shopping list
- cashews shopping list
- 5-6 c. assorted veggies, cut bite sized (we love carrots, celery, broccoli, snow pea pods, zucchini or yellow squash) shopping list
How to make it
- Heat 3 T. broth. Add chicken, cook over medium heat until no pink remains 3-5 minutes. Remove chicken, set aside.
- Add garlic, carrots and celery and broccoli to pan, cook 3-5 minutes until crisp-tender - not too long! Add chicken back to pan.
- Combine cornstarch, soy sauce, ginger and remaining broth, whisk until smooth.
- Add liquid to skillet with chicken and vegetables. Stir until sauce thickens.
- Spoon over rice, sprinkle w/ cashews just before serving.

Made this yesterday. Didn't go exactly by the destructions. My squash and zukes were suspect of having an off taste, after defrost.

Made again to directions. Tastes a lot like chicken lo-mein without the water chestnuts and crunchy noodles.
