This is a delicious breakfast casserole and is really easy to make.

Ingredients
  • 1 doz. eggs
  • 2 lbs cheese (Cheddar and Swiss)
  • 1 lb. bacon ( cooked and crumbled)
  • 2 cps. half and half and milk mixed.
  • 1 bag frozen broccoli florets
  • 1 loaf stale french bread
  • 1 tsp seasoning salt (I like Jane's crazey mixed up salt)

Directions
  1. Butter bottom and sides of a 9 x 13 inch pan
  2. Slice bread into one inch slices and line bottom of pan with them.Squeeze together so there are no empty spaces.
  3. beat eggs, milk and seasoning
  4. Place broccoli over bread
  5. Cover with cheeses
  6. Sprinkle bacon over cheese
  7. Pour egg mixture over all.
  8. Let sit at least 30 minutes and can place in fridge the night before. The longer it sits the better the eggs will soak into the bread. Bake in a 325 degree oven about 45 minutes or untill top is golden brown and a knife inserted in center comes out clean. I like to serve this with a variety of fresh fruit and a good breakfast coffee.

Love the sound of this, I do like these kind of breakfasts. Nothing easier then making it up the night before and then just popping it in the oven when you get up. Time the coffee is finished perking breakfast is done. How much better can that be. Great post, you have my 5


I like the addition of broccoli. This would also be great for evening supper! :)
