Zucchini Pie Recipe

Ingredients

3 c. zucchini diced in small pieces with skin and put in food processer to shred.

1 small chopped onion

4 eggs (beat)

1 T. parsley

1/2 cup oil

1/2 tsp salt

1 cup bisquick

1/2 grated sharp cheese

Directions

Mix all together and pour into greased 13 x 9 inch pan. Bake for 30 minutes or until done in a 350 degree oven - great for lunch or cut up in small pieces and serve with afternoon tea along with finger sandwiches.

I tried this just an hour and 1/2 ago. It is very, very good. The things I changed were- I used 5 eggs, 4 cups of shredded zucchini, and added 1/4 c. of milk,... and I was out of cheddar so I used Monterey Jack... of all things.
I copied this to put in my recipe book for future use. I'll make it w/ the cheddar. It's a great company breakfast, although we had it for brunch!
