How to make it

  • Cook bacon, and set aside to cool.
  • Saute jalapeno in bacon drippings, drain well.
  • Meanwhile, slice avocado in half, remove pit, scoop out the flesh, and put it into a mixing bowl.
  • Mash avocado to your consistency liking.
  • Stir in onion, tomatoes, lime juice, cilantro, salt and garlic.
  • Crumble bacon.
  • Stir both the bacon and well drained jalapenos into the mole.
  • Cover and refrigerate, or you can even serve it now at room temperature.
  • Makes about one cup.

    I've never had bacon in my guacamole before but I love bacon and I love guacamole, so hey , it has to be good. I will definitely try this. Thanks for the recipe
