Excellent Guacamole Dip

- 1 jalapeno, seeded and minced (for hot and spicy mole, leave seeds in) shopping list
- 2 slices of bacon shopping list
- 1 avocado, very ripe shopping list
- 2 tbs. fresh onion, minced (I use red onion, but you can use your favorite kind) shopping list
- 1 small tomato, minced shopping list
- 1 tbs. lime juice (or the juice of half a lime) shopping list
- 1 tbs. fresh cilantro, chopped shopping list
- 1/4 tsp. salt shopping list
- 1 clove garlic, minced shopping list
How to make it
- Cook bacon, and set aside to cool.
- Saute jalapeno in bacon drippings, drain well.
- Meanwhile, slice avocado in half, remove pit, scoop out the flesh, and put it into a mixing bowl.
- Mash avocado to your consistency liking.
- Stir in onion, tomatoes, lime juice, cilantro, salt and garlic.
- Crumble bacon.
- Stir both the bacon and well drained jalapenos into the mole.
- Cover and refrigerate, or you can even serve it now at room temperature.
- Makes about one cup.
