Shrimp and Cheddar Grits

- 4 cups water shopping list
- 1/2 teaspoon salt shopping list
- 1 cup grits shopping list
- 1 cup shredded sharp cheddar cheese shopping list
- 1 tablespoon butter shopping list
- 1 tablespoon peanut oil shopping list
- 2 cups sliced mushrooms shopping list
- 1 clove garlic, minced shopping list
- 1 pound shrimp, peeled, deveined shopping list
- 3 tablespoons parsley shopping list
- 1/8 teaspoon ground black pepper shopping list
- 4 slices bacon, crisp-cooked and crumbled shopping list
- 1/4 cup sliced green onions shopping list
How to make it
- In large saucepan bring water and salt to a boil. Gradually stir in grits. Reduce heat to low. Cook grits, uncovered, for 20 mins or until thick, stirring frequently. Stir in cheese and butter and stir until melted; set aside.
- Meanwhile, in a large skillet heat peanut oil over medium heat, add mushrooms and garlic and cook for 3 mins. Increase heat to medium-high. Add shrimp; cook and stir for 2 - 3 mins more or until shrimp turn opaque. Stir in parsley and black pepper until combined.
- Transfer grits to a serving dish. Top with shrimp mixture. Sprinkle with bacon and green onions.
