French Silk Pie Recipe
FRENCH SILK PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greer Estate in Arlington Texas in 1987.

Ingredients
  • 1 cup butter softened
  • 1-1/2 cups granulated sugar
  • 2 ounces unsweetened chocolate melted and cooled.
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 graham cracker pie shell
  • 1 cup whipping cream whipped
  • Shaved chocolate for garnish

Directions
  1. Place butter in large mixing bowl then gradually add sugar and beat until creamy.
  2. Stir in chocolate and vanilla then add two eggs and beat 5 minutes.
  3. Add next two eggs and beat an additional 5 minutes then pour mixture into prepared pie shell.
  4. Chill 2 hours then top with whipped cream around outside edge of pie.
  5. Sprinkle with shaved chocolate and refrigerate.

Cat, I love this pie, but could I suggest that because the eggs are used raw that pasteurized eggs be used to prevent risk of a salmonella infection? I use Davidson's eggs and you can find where they are sold on"www.safeeggs.com" Honestly,I don't work for them, but have been using them for years so I can enjoy partially or raw egg dishes and let my granddaughter lick the batter bowl without worry. Thanks for the post. Marcia
