Seared Scallops With Blood Orange And Smoked Paprika Sauce Recipe

Great recipe from Whole Foods. The tartness of the orange is a nice complement to the warm meatiness of the scallops. Serve with couscous or rice and some green veggies.

Ingredients
  • 1 cup freshly squeezed blood orange juice (2 to 3 oranges)
  • 1 (16 ounce) bag (Whole Catch wild- Whole Foods brand) frozen scallops, thawed
  • Sea salt, to taste
  • Ground pepper, to taste
  • 1tsp ground cumin
  • 2 Tbsp canola oil
  • 2 ounces unsalted butter, cut into small pieces (4 tablespoons)
  • 1/2 tsp smoked paprika

Directions
  1. Heat blood orange juice in a medium saucepan over low heat. Simmer until reduced by half, about 30 minutes. Stirring occasionally.
  2. Once juice is almost reduced, dust scallops with salt, pepper and cumin on both sides and heat a cast-iron skillet over high heat until smoking.
  3. Add oil to skillet and sear scallops, about 1 to 2 minutes per side, until scallops develop a golden-brown crust and are just cooked through. Take care not to overcook them.
  4. While scallops are searing, whisk the butter into the warm reduced orange juice. Continue whisking until sauce is shiny and smooth. Whisk in paprika and a 1/4 tsp of salt. Taste and adjust seasoning with salt, pepper and paprika.
  5. Spoon a small pool of sauce onto serving plates. Place scallops on sauce and serve immediately.
