Seared Scallops With Blood Orange And Smoked Paprika Sauce

- 1 cup freshly squeezed blood orange juice (2 to 3 oranges) shopping list
- 1 (16 ounce) bag (Whole Catch wild- Whole Foods brand) frozen scallops, thawed shopping list
- sea salt, to taste shopping list
- ground pepper, to taste shopping list
- 1tsp ground cumin shopping list
- 2 Tbsp canola oil shopping list
- 2 ounces unsalted butter, cut into small pieces (4 tablespoons) shopping list
- 1/2 tsp smoked paprika shopping list
How to make it
- Heat blood orange juice in a medium saucepan over low heat. Simmer until reduced by half, about 30 minutes. Stirring occasionally.
- Once juice is almost reduced, dust scallops with salt, pepper and cumin on both sides and heat a cast-iron skillet over high heat until smoking.
- Add oil to skillet and sear scallops, about 1 to 2 minutes per side, until scallops develop a golden-brown crust and are just cooked through. Take care not to overcook them.
- While scallops are searing, whisk the butter into the warm reduced orange juice. Continue whisking until sauce is shiny and smooth. Whisk in paprika and a 1/4 tsp of salt. Taste and adjust seasoning with salt, pepper and paprika.
- Spoon a small pool of sauce onto serving plates. Place scallops on sauce and serve immediately.
