Black Bean Cakes Recipe
Another black bean recipe I wouldn't have thought I would like till I tried. From a friend but not sure where she got it. Believe it would be a good dish for those on veggie diets.

Ingredients
  • 2 (15 ounce) cans black beans
  • 6 tbsp salsa ( also a little more to serve cakes with)
  • 6 tbsp onions, finely diced
  • 3/4 cup red bell peppers, finely diced
  • 3 tbsp fresh cilantro, chopped
  • 1 1/2 cups plain dry breadcrumbs
  • 1/4 cup poblano peppers mild flavor (or 1 tbsp jalapeno, diced)
  • 1 large clove of garlic, minced
  • 2 tsp chipotle sauce (or 1/2 tsp hot sauce)
  • 1 1/2 tbsp lemon juice
  • salt and pepper, to taste
  • TORTILLA CHIP BREADING
  • 1 1/2 cups Tortilla Chips, crushed (baked variety works well)
  • 1 tsp ground cumin

Directions
  1. Place beans in a colander and rinse in cold water.
  2. Drain well, for at least 10 minutes.
  3. Add drained beans and all the other ingredients except for tortilla chip breading into a mixing bowl.
  4. Blend well, mashing some of the beans to form a thick mixture. Form into 6 patties and roll in tortilla breading.
  5. At this point you can cover and refrigerate until ready to heat.
  6. Heat skillet, saute in just enough oil to brown cakes and heat through.
  7. Serve with a dab of salsa.
