Cappellini Pomodoro

- 1/2 pound of cappellini or angel hair pasta shopping list
- 4 Tbl. olive oil shopping list
- 4-6 minced garlic cloves shopping list
- 1/2 small onion, chopped very small shopping list
- 1 15 oz. can of diced tomatoes shopping list
- 2 Tbl. fresh or 1/2 teas. dried parsley shopping list
- 1 Tbl. fresh or 1/4 teas. dried oregano shopping list
- salt and pepper to taste (I always use kosher salt and fresh ground pepper) shopping list
- 4 -6 leaves fresh basil chopped shopping list
- roma tomato shopping list
How to make it
- Saute onion and garlic in the olive oil in a large skillet until tender.
- Add entire can of diced tomatoes, parsley, oregano and salt and pepper. Simmer on low for 5-10 minutes.
- Meanwhile boil salted water and add cappellini and cook until al dente. Drain.
- Add pasta to tomato sauce and heat through.
- Top with fresh basil. If you wish you may also add a diced roma tomato.
- Enjoy!
