This a simple and wonderful tasting pasta that has garlic, tomatoes and fresh herbs. It is very similar to the pasta dish at Olive Garden. It is so easy that I will make it for a quick lunch. It also makes a great side for dinner. I love lots of ... More

Ingredients
  • 1/2 pound of cappellini or angel hair pasta
  • 4 Tbl. olive oil
  • 4-6 minced garlic cloves
  • 1/2 small onion, chopped very small
  • 1 15 oz. can of diced tomatoes
  • 2 Tbl. fresh or 1/2 teas. dried parsley
  • 1 Tbl. fresh or 1/4 teas. dried oregano
  • salt and pepper to taste (I always use kosher salt and fresh ground pepper)
  • 4 -6 leaves fresh basil chopped
  • roma tomato

Directions
  1. Saute onion and garlic in the olive oil in a large skillet until tender.
  2. Add entire can of diced tomatoes, parsley, oregano and salt and pepper. Simmer on low for 5-10 minutes.
  3. Meanwhile boil salted water and add cappellini and cook until al dente. Drain.
  4. Add pasta to tomato sauce and heat through.
  5. Top with fresh basil. If you wish you may also add a diced roma tomato.
  6. Enjoy!
