Redfish Sauce Piquante

- 5 lbs. redfish, cut into pieces (grouper fillets will work here too) shopping list
- 1 cup cooking oil shopping list
- 4 (6 oz.) cans tomato paste shopping list
- 6 (8 oz.) cans tomato sauce shopping list
- 3 bell peppers, chopped shopping list
- 4 small jars sliced mushrooms (I use fresh and cook with the onions) shopping list
- 6 large cloves garlic, minced shopping list
- 3 medium onions shopping list
- 4 shallots, chopped shopping list
- 1/2 bunch parsley, chopped shopping list
- juice of 2 lemons shopping list
- 1Tbsp tabasco shopping list
- 1 qt. water shopping list
- salt & pepper to taste shopping list
How to make it
- In a large skillet, brown fish in oil, remove and set aside.
- Brown onions in oil, add tomato paste and tomato sauce.
- Cover and simmer about 1 hour over low heat.
- Add bell peppers, mushrooms, garlic, shallots, parsley, lemon juice, tabasco, salt and pepper to taste, and water.
- Simmer for 1/2 hour.
- Add fish and cook for 15 minutes.
- Serve over rice with some hot sauce on the side.
