Ingredients

1 cup dried dates, chopped

1 tblsp powdered ginger (optional)

1/2 cup brown sugar

1 tblsp butter

1 tsp baking soda

pinch of salt

pinch of cinnamon

1 cup boiling water

1 1/2 cups SR flour

Note: you can use really any type of dried fruit you like, apricots, persimmons, currants, even raisins. With the sweeter fruits use only 1/4 cup of sugar or less as desired.

Directions

Combine all ingredients in a bowl, add 1 cup boiling water, stir well.

Fold in 1 1/2 cups SR flour. Mix well.

Bake 25-30 minutes in moderate oven either in well-greased roll tins or bundt pan.

Serve warm, sliced and topped with butter or cream.

Note: If you freeze for later use, let thaw completely before serving, about 1 hour.
