Asparagus with citrus mock Hollandaise

- 2 pounds of asparagus spears shopping list
- 1/4 cup dairy sour cream shopping list
- 1/4 cup of mayo or salad dressing shopping list
- 1/2 tsp finely shredded lemon peel shopping list
- 1 tsp lemon juice shopping list
- Water shopping list
How to make it
- Snap off and discard woody bases from asparagus.
- If desired scrape off scales.
- Place a steamer basket in a large skillet.
- Add enough water to come to just below basket. Bring to boiling.
- Place asaparagus in basket. Reduce heat to medium low.
- Cover and steam for 3 to 5 minutes or until asparagus is crisp-tender.
- For sauce, in a small saucepan combine sour cream, mayo, lemon peel and lemon juice. Stir in enough water (1 to 2 teaspoons) to reach desired consistency. Cook and stir over low heat through, but do not boil. Serve sauce over asparagus.
