Asparagus With Citrus Mock Hollandaise Recipe

Ingredients
  • 2 pounds of asparagus spears
  • 1/4 cup dairy sour cream
  • 1/4 cup of mayo or salad dressing
  • 1/2 tsp finely shredded lemon peel
  • 1 tsp lemon juice
  • Water

Directions
  1. Snap off and discard woody bases from asparagus.
  2. If desired scrape off scales.
  3. Place a steamer basket in a large skillet.
  4. Add enough water to come to just below basket. Bring to boiling.
  5. Place asaparagus in basket. Reduce heat to medium low.
  6. Cover and steam for 3 to 5 minutes or until asparagus is crisp-tender.
  7. For sauce, in a small saucepan combine sour cream, mayo, lemon peel and lemon juice. Stir in enough water (1 to 2 teaspoons) to reach desired consistency. Cook and stir over low heat through, but do not boil. Serve sauce over asparagus.
