How to make it

  • Place shredded chicken, celery, cucumber, parsley and almonds into large bowl and set aside.
  • Blanch asparagus and beans in boiling salted water for approx 3 minutes. Rinse with very cold water (iced is best) to stop cooking process. Drain well and add to bowl.
  • In small fry pan over low heat combine oil, garlic and pine nuts. Gently cook until garlic and nuts are golden, remove from heat. Add lemon juice and salt and pepper.
  • Toss salad ingredients well and dress with warm dressing, serve immediately.
  • Enjoy!

    Still with 20 inches of snow on ground here. Ready for spring to get here so I too can make this delicious sounding dish and sit at patio table under my umbrella wathching my smoker do its thing. After all I have to make some especially good smoked chicken for this great salad.

    we are still having soup weather here in Oregon its starting to warm up but not enough yet. won't be long though,saving this one.

    Yum! It is nice and warm here in Houston, Texas too, so we've switched from soups to salads over the last couple of weeks. This sounds great!
