Found in Momma's recipe box. Recipe given credit to Betty Groff. Betty lived in North Pennsylvannia Dutch area. Recipe is from late 60's or early 70's.

Ingredients
  • 1 quart whole milk
  • 2 large eggs, separated (Pastuerized please)
  • 2/3 cup of granulated sugar
  • 2 cups broken saltine crackers
  • 1 cup of grated coconut
  • 1 tsp of vanilla

Directions
  1. While warming milk slowly on the stovetop, beat the egg yolks and sugar until frothy.
  2. Add to hot milk and stir in crackers and coconut.
  3. Cook until thick.
  4. Remove from the heat and add stiffly beaten egg whites and vanilla.
  5. Cool completely. Cover with plastic wrap to prevent a skin from forming.
  6. serves 8
