I was looking for an easy way to use up some leftover feta and I found one! This is a quick and easy way to try something a little different with chicken breast.

Ingredients
  • 4 boneless, skinless chicken breast halves
  • 4 oz feta cheese, crumbled
  • 4 sun-dried tomatoes (or to taste), chopped
  • 1 tsp olive oil
  • 1/2 tsp basil

Directions
  1. Preheat oven to 350-degrees F and spray 9x13 inch baking dish with cooking spray.
  2. Place chicken breasts between 2 pieces of waxed paper and pound until about 1/4 inch thick.
  3. In a bowl combine cheese, tomatoes, olive oil, and basil.
  4. Place 1/4 of cheese mixture in the center of each chicken breast and fold in half.
  5. Bake for 30 minutes or until chicken is no longer pink and juices run clear.
