Chicken Salad Boat

- 1 pineapple shopping list
- 4 to 5 cups cooked left over chicken or turkey, cubed shopping list
- 1/2cup carrot, shredded shopping list
- 1/2 cup celery shopping list
- 1/2cup raisins shopping list
- 1/2 cup dried cranberries shopping list
- 6 tbsp. pecans, chopped shopping list
- 1/2 cup mayonnaise shopping list
- 1/2 cup vanilla yogurt shopping list
- 4 tbsp. sweet pickle relish shopping list
- 1/4 tsp. salt shopping list
How to make it
- Cut pineapple in half lengthwise, keeping leafy crown attached. Remove the inner portion in sections from one half, creating a boat. Repeat with remaining half for another use.
- Remove woody core then cut sections into 1/2" chunks.
- Combine pineapple with remaining ingredients.
- Return mixture to the pineapple boat.
