Ingredients
  • 1 pineapple
  • 4 to 5 cups cooked left over chicken or turkey, cubed
  • 1/2cup carrot, shredded
  • 1/2 cup celery
  • 1/2cup raisins
  • 1/2 cup dried cranberries
  • 6 tbsp. pecans, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup vanilla yogurt
  • 4 tbsp. sweet pickle relish
  • 1/4 tsp. salt

Directions
  1. Cut pineapple in half lengthwise, keeping leafy crown attached. Remove the inner portion in sections from one half, creating a boat. Repeat with remaining half for another use.
  2. Remove woody core then cut sections into 1/2" chunks.
  3. Combine pineapple with remaining ingredients.
  4. Return mixture to the pineapple boat.
