Slow Roasted Pork Shoulder

- Large pork roast (preferably shoulder and bone-in) shopping list
- olive oil (3/4 to 1 cup) shopping list
- sea salt shopping list
- 12 cloves of fresh garlic (half finely minced, half whole) shopping list
- 2 tablespoonsfresh rosemary shopping list
How to make it
- Mix Oil, Salt, Minced Garlic, and Rosemary in a small bowl
- Rub mixture on pork roast
- Wrap roast in plastic or place in re-sealable bag
- Refrigerate, and allow to marinate 5 hours to overnight
- Remove from container and place on rack in a shallow roasting pan
- With a small knife make small deep cuts in roast and insert remaining garlic
- Place in oven and cook at 275 for about 9 hours
- Enjoy.

Made 9lb roast to spec. It is way overdone. Reads over 200F by temp probe. Tore out the guts and am trying to find a sloppy pulled pork to try and save some of this.
