This is a great dish to take to a pot luck. It goes perfectly with fish or seafood meals.

Ingredients
  • 8 oz. chinese egg noodle or vermicelli
  • 2 tbs. rice wine vinegar
  • 2 tbs. toasted Asian sesame oil
  • 1 tbs. + 2 tsp. soy sauce
  • 1 tbs. toasted sesame seeds
  • 1 tbs. peeled grated fresh ginger root
  • 1/4 tsp. salt
  • 2 scallions chopped
  • 1/2 tsp. crushed red pepper (optional)

Directions
  1. Cook noodles according to package directions
  2. Toast sesame seeds under broiler until slightly brown
  3. Whisk together vinegar, oil, soy, sesame, ginger, salt, pepper, and scallions
  4. While noodles are still warm mix into sauce until noodles absorb all liquid.
  5. Serve room temperature or chilled.
