Rosemary Roasted Pork Tenderloin Recipe
This is a favoite recipe and really showcases the rosemary. Tender pork picks up a slightly sweet taste from apple juice.

Ingredients
  • 1/2 c apple juice
  • 1/4c dijon mustard
  • 1/4c fresh rosemary
  • 8 cloves garlic,minced
  • 3/4tsp. coarse ground pepper
  • 3(1lb) pork tenderloin

Directions
  1. In a bowl,combine first five ingredients;mix well. Set aside 1/3c;cover and refrigerate. In a large resealable plastic bag,combine the pork and remaining marinade. Seal bag and turn to coat;refrigerate overnight.
  2. Drain and discard marinade from meat. Place meat in a roasting pan coated with nonstick cooking spray. Pour the reserved marinade on top. Bake uncovered,at 350 for 40-45 mins. Let stand 10 mins before slicing
