Jambalya Recipe
This recipe was one that my mother created for my father (who didn't like very spicy food). It can be dressed up or down to suite your individual taste.

Ingredients
  • 2 cups chicken cooked and de-boned.
  • 1 polish sausage/ kielbasa
  • 1 bunch of fresh parsley
  • 1 cup of chopped celery
  • 2 bunches of green onions chopped
  • 1 can cream of chicken soup (optional)
  • 6-8 cups of chicken stock
  • cayenne pepper to individual taste
  • 2-3 cups of minute rice (or cooked regular rice drained)

Directions
  1. Cook and de-bone chicken.
  2. Keep 6-8 cups of chicken stock.
  3. Bring stock to a boil with chicken.
  4. Add parsley, celery, green onions, soup, and pepper.
  5. Cook until celery is tender.
  6. Add the kielbasa and rice.
  7. Cook until the rice is tender.
  8. Serve immediately.
  9. **Great with cornbread**
