Homemade Blueberry Waffles

- 1 3/4 cups all-purpose flour shopping list
- 2 tablespoons sugar shopping list
- 1 tablespoon baking powder shopping list
- 1teaspoon baking soda shopping list
- 3 large eggs, separated shopping list
- 2 cups reduced-fat sour cream shopping list
- 1 cup low-fat (1%) milk shopping list
- 1/4 cup unsalted butter - melted shopping list
- 1 cup fresh washed blueberries shopping list
- 1 teaspoon of vanilla extract shopping list
How to make it
- Preheat waffle iron
- Into a large bowl, sift the flour, sugar, baking powder, baking soda, and salt
- In a small bowl, with an electric mixer on high, beat the egg yolks, sour cream and milk
- Stir in the dry ingredients with the butter
- Fold in your blueberries and vanilla
- In another clean small bowl beat your egg whites until stiff but not dry
- Using a wire whisk, fold into the flour mixture just until the whites disappear
- Bake waffles according to your waffle iron directions
- If the batter becomes to thick add a little more milk
