Ingredients
  • Basil Dressing
  • 1 bunch (2 ounces) fresh basil leaves
  • 1 garlic clove, minced
  • juice of 1 lemon
  • 1/4 C EVOO
  • salt and freshly ground pepper to taste
  • Lamb
  • 2 racks of lamb, trimmed and cut into 6 chops each
  • 2 Tbl Balsamic vinegar
  • Sea salt and freshly ground pepper to taste
  • 2 Tbl EVOO

Directions
  1. Dressing
  2. Combine dressing ingredients in processor or blend, process until smooth and set aside
  3. Lamb
  4. Lightly rub chops on both sides with the vinegar and season with salt and pepper
  5. Heat olive oil over medium high in a grill pan or large skillet
  6. cook the lamb on each side for 3 or 4 mintues or until done but still pink in center
  7. Do not overcook
  8. Arrange 3 or 4 on each plate and drizzle with the basil dressing
