Wicklow Lamb with Basil Dressing

- basil Dressing shopping list
- 1 bunch (2 ounces) fresh basil leaves shopping list
- 1 garlic clove, minced shopping list
- juice of 1 lemon shopping list
- 1/4 C EVOO shopping list
- salt and freshly ground pepper to taste shopping list
- lamb shopping list
- 2 racks of lamb, trimmed and cut into 6 chops each shopping list
- 2 Tbl balsamic vinegar shopping list
- sea salt and freshly ground pepper to taste shopping list
- 2 Tbl EVOO shopping list
How to make it
- Dressing
- Combine dressing ingredients in processor or blend, process until smooth and set aside
- Lamb
- Lightly rub chops on both sides with the vinegar and season with salt and pepper
- Heat olive oil over medium high in a grill pan or large skillet
- cook the lamb on each side for 3 or 4 mintues or until done but still pink in center
- Do not overcook
- Arrange 3 or 4 on each plate and drizzle with the basil dressing
