How to make it

  • Dressing
  • Combine dressing ingredients in processor or blend, process until smooth and set aside
  • Lamb
  • Lightly rub chops on both sides with the vinegar and season with salt and pepper
  • Heat olive oil over medium high in a grill pan or large skillet
  • cook the lamb on each side for 3 or 4 mintues or until done but still pink in center
  • Do not overcook
  • Arrange 3 or 4 on each plate and drizzle with the basil dressing
