This light tasting chicken salad has so much flavor and is very refreshing for a summer salad. You can use low fat mayo and fat free Cool whip to reduce fat and calorie.

Ingredients
  • 2 1/2 cups cooked diced cold chicken
  • 1 cup celery chopped fine
  • 1 cup sliced red or white grapes
  • 1/2 cup slived toasted almonds
  • 2 Tbls of chopped parsley
  • 1 tsp salt (to taste)
  • 3/4 cup mayonnaise (not salad dressing, real mayo)
  • 3/4 cup Cool Whip
  • Croissants or Romain lettuce to serve chicken salad on

Directions
  1. Season Chicken breasts to taste. I have even marinated them before cooking.
  2. Bake chicken breasts @400 for 20-25 min depending on thickness
  3. Make sure chicken is cold before adding to mixture
  4. Cube chicken or pull into small pieces
  5. Mix cold chicken and the rest of the ingredients together
  6. Serve on Romain Lettuce leaves or a Croissant

Now that's a new "take" on chicken salad...I have to give it a try - LOVE chicken salad on a hot summer day (not that we have any of those at the moment!!)...
