Mango Coconut and Cucumber Salad

This is a refreshing side salad and pairs well with many different cuisines. This is originally from one of the Moosewood books.
Ingredients
- 1 cucumber peeled, seeded and diced shopping list
- 1/2t. minced jalapeno shopping list
- 1T. fresh lime juice shopping list
- 1T. fresh lemon juice shopping list
- 2t. brown sugar shopping list
- 2T. dried coconut shopping list
- 1 mango peeled and diced shopping list
- 1 small red pepper diced shopping list
- 1/2 bunch chopped cilantro shopping list
How to make it
- Mix all ingredients in a serving bowl except cilantro.
- Chill
- Serve with cilantro on top
