Coconut-pecan Chicken

- 3/4c cocktail peanuts shopping list
- 2c sweetened coconut shopping list
- 1/4c flour shopping list
- 2 eggs shopping list
- 1lb boneless,skinned chicken breast(cut in 1" pieces) shopping list
- vegetable oil,for frying shopping list
- Dipping Sauce: shopping list
- 3Tbs honey shopping list
- 3Tbs orange marmelade shopping list
- 1Tbs. soy sauce shopping list
- 1/2 tsp. jarred mustard shopping list
How to make it
- Place peanuts in food processor,whirl until finely chopped. Combine peanuts and coconut in a medium bowl. Plave flour in second bowl. Lightly beat the eggs in a third bowl. Dip chicken in flour,then eggand then in peanut-coconut mixture.
- Pour oil in skillet(1/2" deep). Heat over medium heat. Add chicken to hot oil and cook 4-6 mins,turning once. Drain chicken on paper towel.
- Combine all dipping sauce ingredients in small bowl. Serve with chicken. Enjoy!
