How to make it

  • Place one crust in deep dish pie plate.
  • Prick bottom and sides with fork
  • Peel and slice peaches
  • Place in large bowl
  • toss with lemon juice, salt and flour.
  • let sit about five minutes to let juices begin to form
  • stir once more and pur into pie shell
  • Beat eggs and sugar till light and fluffy
  • Pour over peaches
  • cover with other crust.
  • Crimp and trim edges.
  • Make several slits in top for steam release or if you feel like being fancy you can create a design with your slits.
  • Bake in a 350 degree oven about 40 minutes or untill crust is totally browned on top and bottom. If edges brown to fast you can cover them with foil strips. I always place the pie on a cookie sheet in case some juices cook over. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
