Peach Melba Pie

- 2 prepared pie crusts shopping list
- 2 lbs fresh or frozen peaches shopping list
- 3/4 cp sugar shopping list
- 1/4 tsp salt shopping list
- 2tbs lemon juice shopping list
- 4 tbs flour shopping list
- 4 eggs shopping list
How to make it
- Place one crust in deep dish pie plate.
- Prick bottom and sides with fork
- Peel and slice peaches
- Place in large bowl
- toss with lemon juice, salt and flour.
- let sit about five minutes to let juices begin to form
- stir once more and pur into pie shell
- Beat eggs and sugar till light and fluffy
- Pour over peaches
- cover with other crust.
- Crimp and trim edges.
- Make several slits in top for steam release or if you feel like being fancy you can create a design with your slits.
- Bake in a 350 degree oven about 40 minutes or untill crust is totally browned on top and bottom. If edges brown to fast you can cover them with foil strips. I always place the pie on a cookie sheet in case some juices cook over. Serve warm with a dollop of whipped cream or a scoop of vanilla ice cream.
