This is a delicious spring or summer brunch item. Origional recipe was found on the Food Network website and tweeked a little by me. My family LOVES these for Easter brunch - never any left over!

Ingredients
  • Muffin:
  • 1 box chocolate cake mix
  • 1 8 oz package cream cheese (softened)
  • 1/2 c sour cream
  • 2 eggs
  • 1/4 c & 1/2 C sugar
  • 2 C graham cracker crumbs
  • 6 T butter, melted
  • 1/3 C blueberry preserves
  • Cheese Filling:
  • 8 oz cream cheese package (softened)
  • 1/4 C sugar
  • 1 large egg
  • 1/2 t fresh lemon juice

Directions
  1. preheat oven to 350
  2. Muffin:
  3. lightly grease muffin pan - set aside
  4. in large mixing bowl, combine cake mix, cream cheese, sour cream, eggs & 1/4 C sugar
  5. Mix on medium speed about 4 minutes
  6. Crust:
  7. combine raham cracker crumbs, 1/2 C sugar & melted butter until crumbly. set aside
  8. filling:
  9. beat together cream cheese, sugar, egg and lemon juice on medium speed until completely smooth. set aside.
  10. Set aside 1/2 of the graham cracker mixture for top of muffins.
  11. Line muffin pan with remaining mixture to make bottom crust.
  12. Fill cups almost all the way to the top with muffin batter.
  13. Add dolop of blueberry preserves on top of muffin batter and cut into the batter.
  14. With the back of a wet spoon, indent the batter and top with dollop of creamcheese filler to cover the blueberry preserves
  15. sprinkle remaining graham cracker mixture over top of muffins
  16. bake for 25-30 minutes
  17. cool 10 mins before removing from the pan.
  18. Will make 12-18 depending on the size muffins you make.
