How to make it

  • preheat oven to 350
  • Muffin:
  • lightly grease muffin pan - set aside
  • in large mixing bowl, combine cake mix, cream cheese, sour cream, eggs & 1/4 C sugar
  • Mix on medium speed about 4 minutes
  • Crust:
  • combine raham cracker crumbs, 1/2 C sugar & melted butter until crumbly. set aside
  • filling:
  • beat together cream cheese, sugar, egg and lemon juice on medium speed until completely smooth. set aside.
  • Set aside 1/2 of the graham cracker mixture for top of muffins.
  • Line muffin pan with remaining mixture to make bottom crust.
  • Fill cups almost all the way to the top with muffin batter.
  • Add dolop of blueberry preserves on top of muffin batter and cut into the batter.
  • With the back of a wet spoon, indent the batter and top with dollop of creamcheese filler to cover the blueberry preserves
  • sprinkle remaining graham cracker mixture over top of muffins
  • bake for 25-30 minutes
  • cool 10 mins before removing from the pan.
  • Will make 12-18 depending on the size muffins you make.
