TRANSLATION:
1. Peel and thinly slice potatoes.
2. Do the same with the onions (the fresher = the better)
3. Fry the potatoes in olive oil until they are a little golden but without being hard/crunchy. (Drain)
4. Fry the oinoin until it is bland/soft.
5. Beat together the eggs. Add the fried potatoes to the eggs as well as the onion, peppers, and a little salt.
6. OPTIONAL STEP: Some add milk to make the egg mixture smoother.
7. Mix all together well. Pour all back into the pan.
8. Over a low-medium/low flame, cook the potato and egg mixture until it is set in the middle. (It will not be set on top.)
9. Carefully, flip the egg/potatoe mixture onto a plate. (Place a plate over the pan and FLIP quickly, holding the plate in place.)
10. Return to the flame to finish cooking.
NOTE: Some people opt to flip 2-3 times rather than once - depending on how firmly cooked you prefer the eggs.
Serve with olives, gazpacho, ham - or whatever works.

This is a wonderful dish, I have eaten tortilla many times as I have a friend from Valencia, Spain that makes this dish weekly for her friends and family. I love the combination of flavors, it is simple but delicious.
