How to make it

  • Pelamos y cortamos las patatas en finas láminas.
  • Hacemos lo mismo con las cebollas; si son frescas, mejor.
  • Freimos las patatas en aceite de oliva, hasta que estén un poco doraditas, pero sin estar demasiado crujientes.
  • Sofreimos también la cebolla, hasta que quede pochita.
  • A continuación batimos los huevos y añadimos las patatas fritas, la cebolla y los pimientos del piquillo, un poco de sal!
  • Y, esto es opcional, pero hay quien le añade un chorreón de leche, para suavizarla, a mí personalmente me gusta así.
  • Lo revolvemos todo bien, y lo echamos en la sartén.
  • Lo demás depende de tí, no pongas el fuego muy alto, para que se haga bien por dentro y cuidado al darle la vuelta!
  • En mi casa la acompañamos con aceitunas, gazpacho, salmorejo... qué bueno, qué bueno.

    This is a wonderful dish, I have eaten tortilla many times as I have a friend from Valencia, Spain that makes this dish weekly for her friends and family. I love the combination of flavors, it is simple but delicious.

    TRANSLATION:

    1. Peel and thinly slice potatoes.
    2. Do the same with the onions (the fresher = the better)
    3. Fry the potatoes in olive oil until they are a little golden but without being hard/crunchy. (Drain)
    4. Fry the oinoin until it is bland/soft.
    5. Beat together the eggs. Add the fried potatoes to the eggs as well as the onion, peppers, and a little salt.
    6. OPTIONAL STEP: Some add milk to make the egg mixture smoother.
    7. Mix all together well. Pour all back into the pan.
    8. Over a low-medium/low flame, cook the potato and egg mixture until it is set in the middle. (It will not be set on top.)
    9. Carefully, flip the egg/potatoe mixture onto a plate. (Place a plate over the pan and FLIP quickly, holding the plate in place.)
    10. Return to the flame to finish cooking.
    NOTE: Some people opt to flip 2-3 times rather than once - depending on how firmly cooked you prefer the eggs.

    Serve with olives, gazpacho, ham - or whatever works.
