Chocolate Toffee Smore Cookeis Recipe

  • 1.5 c flour
  • 1/2 c unsweetened cocoa powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 stick unsalted butter, softened
  • 1/4 c shortening
  • 1/2 c granulated sugar
  • 1/2 c packed light brown sugar
  • 1 large egg, lightly beaten
  • 1 tsp pure vanilla extract
  • 1 (8oz) bag toffee baking bits
  • 1/4c graham cracker crumbs
  • 1 c mini marshmallows
  • 1/4 c sweetened condensed milk

Directions
  1. For the dough:
  2. Whisk together flour, cocoa, baking soda and salt in a bowl
  3. Beat together butter, shortening and sugars in another bowl with an electric mixer until fluffy, then beat in egg and vanilla.
  4. At low speed, mix in flour until dough just comes toether, then mix in toffee bits.
  5. Shape dough into an 8 in long log on a floured surface with floured hands, then flatten ends and chill wrapped in plastic wrap at least 6 hours.
  6. For the topping and baking cookies:
  7. Preheat oven to 350 with racks in upper and lower thirds. Line 2 large baking sheets with parchment paper.
  8. Stir together graham cracker crumbs, marshmallows and condensed milk.
  9. Cut dough crosswise into 10 (3/4in thick) clices. Place 2 to 3 slices on each baking sheet. (cookies will spread about 5 inches during baking)
  10. Place a heaping tablespoon of topping in center of each slice.
  11. Bake cookies, switching postions of sheet halfway through baking, until topping is golden and cookies are baking through, about 18-22 mins
  12. Slide cookies with parchment onto racks to cool completely.
  13. Bake remaining cookies in the same manner on freshly lined sheets.
