How to make it

  • For the dough:
  • Whisk together flour, cocoa, baking soda and salt in a bowl
  • Beat together butter, shortening and sugars in another bowl with an electric mixer until fluffy, then beat in egg and vanilla.
  • At low speed, mix in flour until dough just comes toether, then mix in toffee bits.
  • Shape dough into an 8 in long log on a floured surface with floured hands, then flatten ends and chill wrapped in plastic wrap at least 6 hours.
  • For the topping and baking cookies:
  • Preheat oven to 350 with racks in upper and lower thirds. Line 2 large baking sheets with parchment paper.
  • Stir together graham cracker crumbs, marshmallows and condensed milk.
  • Cut dough crosswise into 10 (3/4in thick) clices. Place 2 to 3 slices on each baking sheet. (cookies will spread about 5 inches during baking)
  • Place a heaping tablespoon of topping in center of each slice.
  • Bake cookies, switching postions of sheet halfway through baking, until topping is golden and cookies are baking through, about 18-22 mins
  • Slide cookies with parchment onto racks to cool completely.
  • Bake remaining cookies in the same manner on freshly lined sheets.
