Chocolate Toffee Smore cookeis

- 1.5 c flour shopping list
- 1/2 c unsweetened cocoa powder shopping list
- 3/4 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 stick unsalted butter, softened shopping list
- 1/4 c shortening shopping list
- 1/2 c granulated sugar shopping list
- 1/2 c packed light brown sugar shopping list
- 1 large egg, lightly beaten shopping list
- 1 tsp pure vanilla extract shopping list
- 1 (8oz) bag toffee baking bits shopping list
- 1/4c graham cracker crumbs shopping list
- 1 c mini marshmallows shopping list
- 1/4 c sweetened condensed milk shopping list
How to make it
- For the dough:
- Whisk together flour, cocoa, baking soda and salt in a bowl
- Beat together butter, shortening and sugars in another bowl with an electric mixer until fluffy, then beat in egg and vanilla.
- At low speed, mix in flour until dough just comes toether, then mix in toffee bits.
- Shape dough into an 8 in long log on a floured surface with floured hands, then flatten ends and chill wrapped in plastic wrap at least 6 hours.
- For the topping and baking cookies:
- Preheat oven to 350 with racks in upper and lower thirds. Line 2 large baking sheets with parchment paper.
- Stir together graham cracker crumbs, marshmallows and condensed milk.
- Cut dough crosswise into 10 (3/4in thick) clices. Place 2 to 3 slices on each baking sheet. (cookies will spread about 5 inches during baking)
- Place a heaping tablespoon of topping in center of each slice.
- Bake cookies, switching postions of sheet halfway through baking, until topping is golden and cookies are baking through, about 18-22 mins
- Slide cookies with parchment onto racks to cool completely.
- Bake remaining cookies in the same manner on freshly lined sheets.
