How to make it

  • In a stockpot or kettle over medium heat, combine the lamb, bones, (tied in a cheesecloth bag), if using and the broth
  • Bring to a boil and skim any foam that may rise to the top.
  • Reduce heat to low, cover and cook 60 to 70 minutes or until meat is tender
  • Remove bones, if used
  • Add the potatoes, thyme, bay leaves an herbs, return to a boil, reduce heat and simmer uncovered for 8 to 10 minutesor until potatoes are nearly tender
  • Add the onions, celery, leeks and carrots and simmer an additional 30 minutes, covered
  • Uncover and cook 15 to 20 minutes more or until vegetables are done and stew has thickened
  • Season with salt and pepper
  • To serve ladle into shallow bowls and garnish with parsley
  • Serve with Mac's Brown Bread
