Macs Pub Brown Soda Bread Recipe

Ingredients

1 C flour

3 C coarse whole wheat flour

1 Tbl wheat germ

1 Tbl oat bran

1 Tbl brown sugar

2 tsp baking soda

1 large egg

4 Tbl unsalted butter, melted, Kerrygold if you have it

1 1/2 to 1 3/4 C buttermilk

2 Tbl sesame seeds(optional)

Directions

375 oven Greased and floured 9 x 5 x 3 loaf pan

In a large bowl stir together the dry ingredients

Make a well in the center

With a wooden spoon stir in the egg, melted butter and 3/4 C of the buttermilk

Mix well and gradually add enough remaining buttermilk to form a soft dough

Spoon the dough into the prepared pan.

Smooth the top with a spatula that has been dipped in water or buttermilk and sprinkle with the sesame seeds, if using.

Bake 35 to 40 minutes or until tester inserted in center comes out clean and the bread sounds hollow when tapped on the bottom

Remove from oven and let cool in the pan on a wire rack for 10 minutes.

Turn bread out onto the rack and let cool, right side up, for about an hour to make slicing easier.
