This is really simple dish that i want to share as it is so popular in my family and friends! A tasty combo of turkey, veg and rice with a fusion of indian flavours.....

Ingredients
  • Basmati rice 280g (uncooked)
  • 1 onion (chopped)
  • 1 red and 1 yellow pepper (cut into strips)
  • 2 cloves garlic (finely chopped)
  • 125g green beans (chopped)
  • 3 chicken breasts (250g)
  • 2-3 tsp curry powder (more if you like it hot)
  • 900ml chicken stock
  • 2 tsp mango chutney
  • 2tbsp olive oil
  • 150g low fat natural yogurt (optional, for serving)

Directions
  1. Rinse rice under water until water runs clear.
  2. Stir fry meat for 2 minutes. Remove and set aside.
  3. Fry onion, pepper, garlic for 2 minutes.
  4. Add rice. Stir fry for 2 minutes (may hiss!).
  5. Mix in curry powder.
  6. Stir in stock, green beans, chutney & chicken (?).
  7. Bring to a boil, then lower to a simmer.
  8. Cover and cook for 10 minutes.
  9. Uncover and cook for 2 minutes.
  10. When plated, drizzle natural yogurt over dish (optional)
  11. Serve with a big green salad

This sounds great! Easy, quick anf impressive.One dish and one happy family! Now, if only I could find REAL greek yogurt. ;(
