Chicken Pilaff

- basmati rice 280g (uncooked) shopping list
- 1 onion (chopped) shopping list
- 1 red and 1 yellow pepper (cut into strips) shopping list
- 2 cloves garlic (finely chopped) shopping list
- 125g green beans (chopped) shopping list
- 3 chicken breasts (250g) shopping list
- 2-3 tsp curry powder (more if you like it hot) shopping list
- 900ml chicken stock shopping list
- 2 tsp mango chutney shopping list
- 2tbsp olive oil shopping list
- 150g low fat natural yogurt (optional, for serving) shopping list
How to make it
- Rinse rice under water until water runs clear.
- Stir fry meat for 2 minutes. Remove and set aside.
- Fry onion, pepper, garlic for 2 minutes.
- Add rice. Stir fry for 2 minutes (may hiss!).
- Mix in curry powder.
- Stir in stock, green beans, chutney & chicken (?).
- Bring to a boil, then lower to a simmer.
- Cover and cook for 10 minutes.
- Uncover and cook for 2 minutes.
- When plated, drizzle natural yogurt over dish (optional)
- Serve with a big green salad
