Lentil loaf vegetarian meat loaf

- 2 cups water shopping list
- 1 teaspoon salt shopping list
- 1 cup lentils shopping list
- 1 small onion, diced shopping list
- 1 cup quick-cooking oats shopping list
- 3/4 cup grated cheese (cheddar, swiss, jack or american) shopping list
- 1 egg, beaten shopping list
- 4 1/2 ounces spaghetti sauce or tomato sauce shopping list
- 1 teaspoon garlic powder shopping list
- 1 teaspoon dried basil shopping list
- 1 tablespoon dried parsley shopping list
- 1/2 teaspoon seasoning salt shopping list
- 1/4 teaspoon black pepper shopping list
How to make it
- Bring salt and water to a boil in a saucepan.
- Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
- Drain and partially mash lentils.
- Allow lentils to cool slightly and stir in bowl with onions, oats and cheese until mixed.
- Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper, mixing well.
- Put in non-stick or greased loaf pan, smooth top with back of spoon and bake at 350 degrees for 30- 45 minutes.
- Remove when top of loaf is dry, firm and golden brown.
- Cool for about 10 minutes.
- Run a sharp knife around edges of pan then turn out loaf onto serving platter.
