Ingredients
  • 4lbs or so PORK BUTT
  • Spices (salt, pepper, granulated garlic)
  • 5 bottles Samuel Adams Winter Ale (depends on pot size)
  • 6 oz. TEQUILA
  • Peanut or olive oil

Directions
  1. Season the pork on all sides and brown it in the pot with the oil. For some reason, my pork came in 2 large slabs, about 1.5" thick each. If your pork is a single piece and thick, it may take longer to cook.
  2. Once browned, pour in the beer. I actually only had 4 of the Winter Ale, but added a bottle of Holiday Porter, so the beer was pretty strong-flavored, not a light flavor. I imagine using something like Bud or something lighter would result in a lighter flavor. Add the tequila for a little extra flavor.
  3. Once it's cooked (falls apart with fork), remove the pork from the pot and move to a cutting board. Pick through it to remove any fat, bone, etc., and shred it up while doing so. As it's shredded, put aside into a container, and it's ready to use.
  4. Serve on soft corn tortillas as a soft taco with salsa and lettuce, or on a flour tortilla with salsa and sour cream as a burrito. It's delicious. I found a Key Lime and Garlic salsa that was especially good with this meat. Enjoy!
