Ingredients
  • 1-2 chicken breasts
  • 1/2 green pepper, chopped
  • 1/2 yellow onion, chopped
  • 1/2 cup fresh cilantro, finely chopped
  • Franks Redhot
  • olive or vegetable oil
  • 2-4 cups shredded Mexican blend cheese

Directions
  1. I like to let the chicken marinate in Franks Redhot in the fridge for an hour or so, but this is not necessary.
  2. Chop chicken into bite size pieces
  3. Saute pepper and onion over medium heat in a bit of oil until tender, 7 minutes or so
  4. Add chicken and cook until chicken is no longer pink (5-6 minutes)
  5. Continually add redhot to your liking
  6. remove chicken mixture and set aside
  7. Lightly oil pan and place tortilla in pan
  8. add 1/2 of chicken mixture and cheese- spread evenly
  9. top with another tortilla
  10. Cook until cheese melts and tortilla gets a little crispy but not burnt
  11. Flip carefully- you have to wait for the one side to be really cooked so the quesadilla will not open
  12. Remove and let cool for a minute or two- cut and serve
  13. ENJOY!!!
