How to make it

  • Fry the tortillas until crispy. You can also spray them with some oil and put them in the oven,until they are crispy. You have to move them so that they don´t burn on one side.
  • Boil the tomatoes with the piece of onion until very tender.
  • Put tomatoe in the blender and puree it with chipotle.
  • In a caserole put a tablespoon of oil and strain the pureed tomatoes,leave it there until it changes color, then add the chicken stock,cilantro and let it boil.
  • Add salt and pepper to taste.
  • When you are ready to serve add tortilla (don´t let it boil)
  • Put all garnishes on the side separatly.

    I believe this is similar to how Mom makes it. I like that you are using fresh tomatoes. I got a bit tripped up by the cream and cheese. Finally figured out those are garnish directions. Slow reader here hehhe.

    Sounds very tasty sogg. Thanks for the post, I'll have to try that for lunch one day. I like the flavors in the soup. Does the cream go on top after it's finished?
