How to make it

  • In a heavy saucepan heat the butter and olive oil over medium heat.
  • Saute the onion for about two minutes.
  • Add the garlic and saute until aroma is apparent.
  • Add the Arborio rice and cook for about two minutes until the rice is fully coated by the oil and butter.
  • Add about one cup of the stock and stir frequently until it is fully absorbed.
  • Repeat this step until the rice is cooked thoroughly and creamy.
  • Remove from heat and stir in asparagus and parmesan.
  • Adjust seasonings with salt and pepper.
