Asparagus Risotto

- 1 cup arborio rice shopping list
- 4-5 cups chicken stock shopping list
- 1 tablespoons onion, diced shopping list
- 2 teaspoons garlic, chopped shopping list
- 1 tablespoon olive oil shopping list
- 1/2 tablespoon butter, unsalted shopping list
- 3/4 cup fresh asparagus, sliced shopping list
- 2-4 tablespoons Parmesan, grated shopping list
- salt and pepper to taste shopping list
How to make it
- In a heavy saucepan heat the butter and olive oil over medium heat.
- Saute the onion for about two minutes.
- Add the garlic and saute until aroma is apparent.
- Add the Arborio rice and cook for about two minutes until the rice is fully coated by the oil and butter.
- Add about one cup of the stock and stir frequently until it is fully absorbed.
- Repeat this step until the rice is cooked thoroughly and creamy.
- Remove from heat and stir in asparagus and parmesan.
- Adjust seasonings with salt and pepper.
