How to make it

  • make sure oven rack is on 2nd shelf and preheat oven to 400. Spray baking sheet to prevent sticking (cheese will melt onto pan)
  • pound chicken to 1/4" thick
  • mix the ricotta, parmesean, and tomatoes together in shallow bowl
  • dip chicken into beaten eggs
  • coat with bread crumbs
  • place coated chicken on work surface and layer with slice of smoked provelone
  • spread heaping spoonful of ricotta tomato mixture over provelone
  • roll up and secure with toothpicks
  • place on baking sheet and drizzle each rollup with olive oil.
  • bake until chicken is golden and cheese is bubbly
  • serve with penne tossed with olive oil, roasted garlic and sweet basil

    Sounds yummy!! Do you thing wrapping the chicken in puff pastry then baking it would work well?
