Sun-dried Tomato Stuffed Baked Chicken Recipe
This chicken dish puts a more sophisticated spin on the traditional baked stuffed chicken. It's really easy and really good, especiallly with a side of penne and a glass of wine!

Ingredients
  • 2 large eggs, slightly beaten
  • 1 C seasoned bread crumbs
  • 1 1/2 C ricotta cheese
  • 1 handful parmesean cheese
  • 1 C Oil packed sun-dried tomatoes - drained and chopped
  • 8 chicken breast cutlets - no skin
  • 8 slices smoked provelone cheese
  • extra virgin olive oil

Directions
  1. make sure oven rack is on 2nd shelf and preheat oven to 400. Spray baking sheet to prevent sticking (cheese will melt onto pan)
  2. pound chicken to 1/4" thick
  3. mix the ricotta, parmesean, and tomatoes together in shallow bowl
  4. dip chicken into beaten eggs
  5. coat with bread crumbs
  6. place coated chicken on work surface and layer with slice of smoked provelone
  7. spread heaping spoonful of ricotta tomato mixture over provelone
  8. roll up and secure with toothpicks
  9. place on baking sheet and drizzle each rollup with olive oil.
  10. bake until chicken is golden and cheese is bubbly
  11. serve with penne tossed with olive oil, roasted garlic and sweet basil

This dish reminds me of sitting outside on a warm spring eveing with good friends and good wine! Thanks for the post, its a definite winner!


Sounds yummy!! Do you thing wrapping the chicken in puff pastry then baking it would work well?


Thanks for the inspiration shygurll99. I will try a variation of this recipe w/puff pastry and if it works I will post it!
