How to make it

  • Preheat oven to 275°.
  • Grease and flour a 9 x 13 pan or 2 9x9 pans.
  • In a small bowl, mix mashed banana with the lemon juice; set aside.
  • In a medium bowl, mix flour, baking soda and salt; set aside.
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in 2 tsp vanilla.
  • Beat in the flour mixture alternately with the buttermilk.
  • Stir in banana mixture.
  • Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in centre comes out clean.
  • Remove from oven and place directly into the freezer for 45 minutes.
  • This will make the cake very moist.
  • For the frosting, cream the butter and cream cheese until smooth.
  • Beat in 1 tsp vanilla.
  • Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
  • Spread on cooled cake.

    Was looking for a moist banana cake with cream cheese frosting since there were some bananas in the kitchen..so i just tried this recipe today and it turned out to be extremely delicious!!!it was so moist and i didn't even put in the freezer.try eating it while it is still hot with the icing melting on top.ultimate comfort dessert!!!thanx for the recipe!!!

    I made this, using 1/2 cup butter-flavored crisco and 1/4 c. butter... cut the sugar back to 2 cups and baked it @ 325 for an hour. I did not use the "freezer method", as banana cake is already very moist, but the cake is absolutely wonderful. For the frosting, I cut the butter back to 1/4 cup... and in the end garnished it w/ chopped walnuts (as in the picture here). The buttermilk makes the cake... don't even consider substituting!
