Spicy Coleslaw Curtido Salvadoreno

- 1 medium head cabbage, chopped shopping list
- 2 small carrots, grated shopping list
- 1/2 small onion, sliced thin shopping list
- 1/2 t red pepper flakes shopping list
- 1/2 t oregano shopping list
- 1 t olive oil shopping list
- 1 t salt shopping list
- 1 t brown sugar shopping list
- 1/4 c vinegar shopping list
- 1/2 c water shopping list
How to make it
- Blanch the cabbage in boiling water for 1 minute. Drain and place in a large bowl.
- Add carrots, onion, red pepper, oregano, olive oil. salt brown sugar, vinegar and water.
- Refrigerate at least 2 hours before serving
- 1 Cup serving has 41 calories

This reminds me of how a jamaican friend of mine prepares his cabbage--he adds squash to his. This is actually very good.
