How to make it

  • Slice onion into quarter inch thick half cirlces. Set aside.
  • Slice tomato into small chunks (or open can and drain). Set aside.
  • Pour olive oil into pan and heat on medium. Do not let oil smoke.
  • Rub seasoning into both sides of all chicken breasts.
  • When oil appears "rippled" place chicken breasts in pan. Sear on each side for 6 minutes.
  • Add onions, tomatoes and broth.
  • Cover and simmer on low for approx 30 minutes or until cooked through.
  • Serve with rice.
