One Pan Soulfood Smothered Chicken

- 2 lbs un-split boneless skinless chicken breasts (approx 3 or 4) shopping list
- Aprox. 6 teaspoons Sylvia's Soulfood seasoning or Your Preferred cajun seasoning Blend shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 1 medium sized sweet onion shopping list
- 1 large tomato or 1 can (14.5 oz) diced tomatoes shopping list
- 1/2 cup chicken broth (more or less to taste) shopping list
How to make it
- Slice onion into quarter inch thick half cirlces. Set aside.
- Slice tomato into small chunks (or open can and drain). Set aside.
- Pour olive oil into pan and heat on medium. Do not let oil smoke.
- Rub seasoning into both sides of all chicken breasts.
- When oil appears "rippled" place chicken breasts in pan. Sear on each side for 6 minutes.
- Add onions, tomatoes and broth.
- Cover and simmer on low for approx 30 minutes or until cooked through.
- Serve with rice.
