One Pan Soulfood Smothered Chicken Recipe
I had found a recipe for "Louisiana Smothered Chicken" in a low fat cookbook and I modified it to fit my family's tastes. My family went wild over the dish and now they request it often.

Ingredients
  • 2 lbs un-split boneless skinless chicken breasts (approx 3 or 4)
  • Aprox. 6 teaspoons Sylvia's Soulfood Seasoning or Your Preferred Cajun Seasoning Blend
  • 1 tablespoon extra virgin olive oil
  • 1 medium sized sweet onion
  • 1 large tomato or 1 can (14.5 oz) diced tomatoes
  • 1/2 cup chicken broth (more or less to taste)

Directions
  1. Slice onion into quarter inch thick half cirlces. Set aside.
  2. Slice tomato into small chunks (or open can and drain). Set aside.
  3. Pour olive oil into pan and heat on medium. Do not let oil smoke.
  4. Rub seasoning into both sides of all chicken breasts.
  5. When oil appears "rippled" place chicken breasts in pan. Sear on each side for 6 minutes.
  6. Add onions, tomatoes and broth.
  7. Cover and simmer on low for approx 30 minutes or until cooked through.
  8. Serve with rice.
