Ingredients

How to make it

  • Chop up the pine nuts and rosemary finely and mix with honey and let sit while you get the rest ready.
  • Peel 1 quince (or apple) and chop it up finely. Put this in a bowl with lime juice, 2-3 tbsp of honey, and rum. Let this sit.
  • Peel the rest of the quinces (or apples) and split them lengthwise. Spoon out the core of the fruit so you have a nice hole in the middle.
  • Heat your chopped quince (or apple) mix with water. Put the quince (or apple) halves in the pan and simmer.
  • Turn the quince over and then cook until tender. Add water as needed.
  • Now take out the quinces and put aside.
  • If the quince sauce is too runny let it simmer a bit more to thicken up. It should be a syrup-type consitency.
  • Fill up your quince holes with pine-nut and rosemary.
  • Pour your sauce in a tin/pan and put the pan with your quince halves on the grill for a few minutes until their surface is golden brown.

Sayyyyy-- this is neato! It's not easy finding recipes that use pine nuts except for pesto, so it's going in my recipe box. Thankx bunches!

YUM! My father-in-law has a quince tree and I've been baking his quince like apples (a little butter, brown sugar and cinnamon). Your recipe sounds awesome!
