Peach Chutney

                    - 1/4 cup red onion, sliced shopping list
 - 1 tsp. fresh ginger, minced shopping list
 - 1/4 tsp. red pepper flakes shopping list
 - 1/2 cup dried apricots, chopped shopping list
 - 1/4 cup water shopping list
 - 2 Tbsp. honey shopping list
 - 2 Tbsp. apple cider vinegar shopping list
 - 2 cups frozen sliced peaches shopping list
 - 1/4 tsp. ground cinnamon shopping list
 - 1/8 tsp. allspice shopping list
 - 1 Tbsp. torn fresh mint shopping list
 
How to make it 
                    - Sweat onion, ginger and pepper flakes in oil in a large skillet over medium heat. cook until soft about 5 minutes.
 - Add apricots, water, honey and vinegar. Cook until apricots begin to soften and mixture is syrupy, about r minutes.
 - Off heat, stir in peaches and spices. cover until peaches warm through, at least 10 minutes. Before serving stir in mint.
