How to make it
- combine rum, pineapple juice, lime juice, sugar and mint in a small bowl, set aside.
- Stir boiling water into rum mixture until sugar dissolves.
- Transfer to a 9" metal or glass pan and freeze until solid, 2 to 3 hours. Scrape ice with a fork, then scoop into serving dishes.
- Serve immediately
