Honey - Berry Jam

- 1 cup fresh (or thawed) raspberries shopping list
- 1 cup fresh (or thawed) blueberries shopping list
- 2 cups fresh (or thawed) strawberries shopping list
- 1 oz. powdered pectin shopping list
- 4 cups clover honey shopping list
How to make it
- Crush all the berries together thoroughly.
- In a large pot, add fruit puree and pectin, mix well.
- Bring to a full boil, stirring constantly.
- Stir in honey.
- Bring back to a rolling boil again, and boil hard 2 minutes, stirring constantly.
- Remove from heat and skim off foam.
- Stir and skim for 5 minutes.
- Ladle into hot, sterilized glasses, and let stand at room temperature until set (12-24 hours).
- Freeze if not using immediately.

Thanks for the post. This will be a good one for my husband who will eat no refined sugar. We buy local raw honey 5 gal. at a time because we use so much in our cooking. I didn't have a honey jam recipe and this will be nice for when the local strawb...more
