Country Chicken Casserole

- Filling shopping list
- 1/4 C butter shopping list
- 1/3 cup flour shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp white pepper shopping list
- 1/4 tsp dried thyme leaves shopping list
- 2 Cups Half and Half shopping list
- 2 Cups cubed cooked chicken shopping list
- 1 (1 lb) pkg mixed vegetables, thawed shopping list
- Topping shopping list
- 1 Cup flour shopping list
- 1/4 cup grated Parmesan shopping list
- 1/4 tsp baking powder shopping list
- 1/3 cup butter, cut up shopping list
- 1 rgg, beaten shopping list
How to make it
- Heat oven to 400F. Spray a 12 x8 (2 quart) baking dish or casserole with cooking spray
- Filling
- Melt 1/4 C butter in large saucepan over mdium heat.
- Add 1/3 C flour, salt, pepper and thyme; blend until smooth
- Add Half and Half and cook until mixture boils and thickens, stirring constantly
- Stir in chicken and vegetables, heat through
- Pour into prepared baking dish
- Topping
- Lightly spoon flour into measuring cup; level off
- In a small bowl, combine , cheese and baking powder; mix well
- with a fork or pastry blender, cut in 1/3 cup cut up butter until mixture is crumbly
- Stir in egg until well mixed
- Crumble topping over chicken mixture
- Bake at 400F for 20 to 30 minutes or until topping is golden and filling bubbles around edges.
